CHEF PHILIPPE LEGARDINIER
Our Chef, Mr Philippe Legardinier was born in Brittany, more precisely in Finistère in Concarneau. It is from his origins that he chooses his profession, to be able to work with the products of the sea and of his region.
It is at the age of 16 that he begins his apprenticeship and that he achieves his first professional experiences, in restaurants of the Brittany region. He prepared the UV1 master’s degree in collaboration with the chef of the Imperator restaurant in Nîmes, at the time a “”Compagnon de France””.
Later on, he will join the oldest restaurant in France: La Mère Poulard at the Mont Saint Michel. This inn, dating from 1888, represents for Mr Paul Bocuse: “”France””. Philippe Legardinier will spend 3 years there, during which he will acquire his knowledge, his expertise and refine his culinary signature even more.(https://lamerepoulard.com/)
In 1988 he joined the restaurant of the Concorde Palm Beach Hotel in Marseille. He spent 4 years there during which he discovered the South of France, Mediterranean and Provencal cuisine. It is within this establishment that he will evolve to the rank of chef de partie.
He finally arrived in the city of Arles in 1991, where he first worked at the A Hotel Atrium for 15 years. This was followed by a number of experiences as a chef de cuisine in various establishments in the region, such as the restaurant of a luxury barge near the Van Gogh Bridge in Arles.
Finally, with 38 years of experience, he is today and for the last 3 years, Chef de Cuisine of the hotel Atrium. At the same time, he visits professional high schools as a jury examiner, with the aim of passing on his passion and knowledge to future generations.
